Dimitris’s research is in food biotechnology and aims to address key challenges for the transformation towards a more sustainable food system. Main drivers include the elimination of food loss and waste, the stimulation of the bioeconomy, the efficient utilisation of natural resources, and the development of more sustainable and healthier foods.
The main topics of focus are:
- Valorisation of agri-food by-products through industrial biotechnology and chemical/physical fractionation to produce functional components, e.g., polysaccharides, proteins
- Bioprocess development for the microbial production of food ingredients through fermentation, e.g. proteins, colouring agents
- Development of biodegradable food packaging

Dimitris has been awarded research funding from various agencies, including the UK Biotechnology and Biological Sciences Research Council (BBSRC), Global Challenges Research Fund (GCRF), Innovate UK, European Institute of Innovation & Technology (EIT) Food, as well as industry. He has supervised 23 PhD students to completion.
